New research from the University of Kent shows that consuming cherries may help prevent Alzheimer's and reduce food waste. The study, published in the journal Antioxidants, highlights that turning cherries into powder increases their anthocyanin content, while also utilizing cherries that would otherwise end up in the trash.

Researchers found that cherry powder has greater biological activity and may offer more health benefits compared to extracts or supplements. Dr. Marina Ezcurra, the lead researcher, emphasized the importance of collaborating with local growers and the prospect of utilizing agricultural by-products.

Dr. Sarah Blackburn noted that the research shows how food waste can be transformed into beneficial health supplements. In the United Kingdom, approximately one million people live with dementia, and this number is expected to increase significantly by 2040. Previous studies have shown that consuming foods rich in flavonoids may reduce the risk of developing dementia.
