Recipe: Vegan Lasagna

A delicious and healthy recipe for vegan lasagna, a twist on the classic Italian comfort food.
Ingredients: Extra virgin olive oil, onion, eggplant, zucchini, red bell pepper, chestnut mushrooms, garlic, red lentils, canned tomatoes, oregano, sugar, vegetable cube (vegan), spinach, lasagna sheets (egg-free), salt, pepper.
For the white sauce: Sunflower oil, all-purpose flour, almond milk, nutritional yeast, bay leaf (optional), nutmeg, salt, pepper.
Instructions: Preheat oven to 200°C. Sauté the vegetables, add lentils, tomatoes, and spices. Simmer for 15 minutes. Prepare the white sauce with almond milk. Layer lasagna with vegetables and sauce in a baking dish. Bake for 35-40 minutes.
Let it stand for 5 minutes before serving.
