Recipe: Eggplant Pizzas – A Light and Delicious Dish

An alternative pizza recipe using eggplant as a base, ideal for a light summer meal.
Ingredients:
For the tomato sauce: 1 small onion, chopped, 300g chopped tomatoes, 300g tomato juice, ½ tsp dried basil, 1 tsp olive oil, 1 tsp sugar, salt, pepper.
For the eggplant pizzas: 3 eggplants, 2 tbsp olive oil, ½ tsp dried oregano, 120g mozzarella and regato (60g and 60g), fresh oregano or basil for garnish, salt, pepper.
Instructions:
1. Prepare the sauce by sautéing the onion, adding sugar, tomatoes, basil, and tomato juice. Simmer for 5 minutes.
2. Preheat oven to 180°C. Bake the eggplant slices with olive oil, salt, pepper, and oregano for 30 minutes.
3. Add sauce and cheese and bake for another 10 minutes.
4. Garnish with fresh basil or oregano.
