Recipe: Stuffed Squid with Mushrooms

A delicious recipe for stuffed squid with mushrooms, perfect for a special meal.
Ingredients:
- 1 kg squid (cleaned, with tentacles)
- 250 g mushrooms (white or brown), finely chopped
- 1 medium onion, finely chopped
- 2 fresh spring onions, finely chopped
- 2 cloves garlic, finely chopped
- ½ cup glace rice (optional)
- ½ cup white wine
- 1 grated tomato or 200 g canned chopped tomatoes
- ½ bunch parsley, finely chopped
- 80 ml olive oil
- Salt, pepper
- A little boukovo (optional)
- Juice of ½ lemon
Instructions:
- Sauté the onions, tentacles, and mushrooms.
- Add the rice (if used), wine, and tomato.
- Fill the squid and bake in the oven at 180°C for 35-40 minutes.
