Recipe: Stuffed Squid with Mushrooms

A delicious recipe for stuffed squid with mushrooms, perfect for a special meal.

Ingredients:

  • 1 kg squid (cleaned, with tentacles)
  • 250 g mushrooms (white or brown), finely chopped
  • 1 medium onion, finely chopped
  • 2 fresh spring onions, finely chopped
  • 2 cloves garlic, finely chopped
  • ½ cup glace rice (optional)
  • ½ cup white wine
  • 1 grated tomato or 200 g canned chopped tomatoes
  • ½ bunch parsley, finely chopped
  • 80 ml olive oil
  • Salt, pepper
  • A little boukovo (optional)
  • Juice of ½ lemon

Instructions:

  1. Sauté the onions, tentacles, and mushrooms.
  2. Add the rice (if used), wine, and tomato.
  3. Fill the squid and bake in the oven at 180°C for 35-40 minutes.
