Delicious Fish Soup Recipe with Vegetables

A nutritious and delicious recipe for fish soup with vegetables, perfect for cold days.
Ingredients:
- 500g fresh fish fillet (cod, red mullet, or white fish)
- 1 large onion, finely chopped
- 2 cloves of garlic, finely chopped
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 leek, finely chopped
- 1 stalk of celery, finely chopped
- 2 tomatoes, grated, or 1/2 cup tomato juice
- 1 liter fish stock or water
- 2 tbsp olive oil
- Salt, pepper
- Fresh parsley
- Lemon for serving
Instructions:
- Heat the olive oil in a pot and sauté the onion, garlic, leek, and celery for 3-4 minutes until softened.
- Add the carrots and potatoes and stir for 2 minutes.
- Add the tomatoes or juice and bring to a boil for 5 minutes.
- Add the stock or water, salt, and pepper and simmer for 15-20 minutes until the vegetables are tender.
- Cut the fish into pieces and add it to the pot.
- Cook over low heat for 5-7 minutes until the fish is cooked through.
- Remove from heat, add chopped parsley, and serve with a slice of lemon.
