Delicious Fish Soup Recipe with Vegetables

A nutritious and delicious recipe for fish soup with vegetables, perfect for cold days.

Ingredients:

  • 500g fresh fish fillet (cod, red mullet, or white fish)
  • 1 large onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1 leek, finely chopped
  • 1 stalk of celery, finely chopped
  • 2 tomatoes, grated, or 1/2 cup tomato juice
  • 1 liter fish stock or water
  • 2 tbsp olive oil
  • Salt, pepper
  • Fresh parsley
  • Lemon for serving

Instructions:

  1. Heat the olive oil in a pot and sauté the onion, garlic, leek, and celery for 3-4 minutes until softened.
  2. Add the carrots and potatoes and stir for 2 minutes.
  3. Add the tomatoes or juice and bring to a boil for 5 minutes.
  4. Add the stock or water, salt, and pepper and simmer for 15-20 minutes until the vegetables are tender.
  5. Cut the fish into pieces and add it to the pot.
  6. Cook over low heat for 5-7 minutes until the fish is cooked through.
  7. Remove from heat, add chopped parsley, and serve with a slice of lemon.
